Our all time favourite frozen pool party cocktail hails from Old San Juan, Puerto Rico. The tropical blend of coconut milk, rum and pineapple juice is both delicious and easy to make.
Ingredients
120ml pineapple juice
60ml Bacardi or Captain Morgan white rum
60ml coconut cream
6 ice cubes
1 pineapple wedge for garnish
Directions
- Pulse all of the ingredients in a blender (apart from the garnish!) and blend until smooth
- Pour the mixture into a tall glass. Garnish with a pineapple wedge
For a non alcoholic version, substitute an extra ounce of coconut cream and skip the rum!
